Nowadays we are always on the move and sometimes we may think we don’t have time to cook a healthy, nutritious meal. We may even on occasion stop by a fast food restaurant to get something quick and convenient, which means it’s probably not healthy or nutritious. Making home cooked meals is a sure fire way to know what’s in your food without all the preservatives and additives. You can even prep your vegetables ahead of time to make cooking your meal faster and easier. This is why I am a huge fan of making quick, easy, vegan, nutritious and healthy meals. This is one of my favorite recipes that’s easy to make and it tastes delicious. This recipe has some of my favorite vegetables and my favorite coconut brown rice. You can also add your favorite spices, pasta, quinoa OR rice. Below is a DELICIOUS recipe and instructions.

Sautéed Vegetables with Coconut Rice

1 small bag of fresh or frozen spinach

1 medium size zucchini

1 medium sized red onion

1 bag of frozen shiitake mushrooms OR fresh shiitake mushrooms

1 small or medium red bell pepper

1 small or medium yellow bell pepper

1 small or medium orange bell pepper

1 pckg of Tasty brand Coconut Brown Rice

2 tablespoons of grape seed oil


1 tsp Granulated garlic

1 tsp Granulated onion

1/4 tsp Smoked Applewood sea salt

1/2 tsp Smoked Paprika


Rinse and chop the bell peppers, onions and zucchini and shiitake mushrooms.

Add grapeseed oil to a skillet and add your veggies including the frozen or fresh spinach. If you are using frozen mushrooms you can add them to the skillet as well.

Add your spices to the skillet and sauté the vegetables for 3-4 minutes

Once the veggies are done add your package of Tasty Coconut Brown Rice, while breaking it up along the way and stir throughout the veggies

And you are DONE

TIP: If you want to make your own coconut brown rice, instead of cooking the rice with water, use coconut water as a substitute and cook brown rice according to package.
