I LOVE making QUICK and EASY vegan meals that to me are DELICIOUS and full of veggies. Often times I use veggies that are left over or raw veggies that are on their last leg. I also love experimenting with different spices and herbs, but my basic usual suspects are onion powder, garlic powder, smoked apple wood sea salt and smoked paprika. Out of all these seasonings the smoked apple wood sea salt is my favorite. It adds this smoky apple wood flavor that I truly love and cant get enough of. The first time I tried this salt it was sprinkled on an avocado and it was FANTASTIC and I have been hooked since trying the combination. Well enough of that lets get to the nitty gritty with this Vegan Italian Sausage Stir Fry..


1 package of thawed Beyond Meat Italian sausage( you slice Or dice them)

1 medium sized yellow bell pepper diced

1 medium red bell pepper diced

1 medium red onion diced

3 cups of sliced crimini mushrooms

1 large zucchini (diced OR sliced)

1 tsp of onion powder

1 tsp of garlic powder

½ tsp of smoked apple wood sea salt

1 tsp smoked paprika

3 Tbl spoons grape seed oil


Add 2 Tbl spoons of grape seed oil to a medium or large skillet, let it heat on medium heat and add the veggies listed above and the spices listed above. Sauté the veggies for at least 3 minutes OR until they reach the consistency you like. In another skillet add the 1 Tbl spoon of leftover grape seed oil and heat on medium heat. Once hot add the Beyond Meat Italian sausage and cook according to the instructions on the package. Once the sausages are done add them to the skillet with the sautéed veggies and stir to mix the sausage and veggies together.

Side Note: You can eat this dish as is OR you can eat with brown rice or quinoa.
